For the stuffed zucchini with rice and minced meat, peel onions and garlic, finely chop one onion.
Heat some olive oil in a pot, sauté finely chopped onion in it until colorless, add garlic. Roast briefly and add to the minced meat.
Mix the meat with half a package of Uncle Ben’s® rice, the cream, the chopped parsley, the Dijon mustard and the crumbled feta cheese and season to taste.
Wash the zucchini, cut in half lengthwise, scoop out with a small spoon or Parisienne cutter, fill with the mince.
Place in an ovenproof baking dish, drizzle with a little oil. Add thyme, halved cocktail tomatoes and the second onion, roughly chopped.
Roast in the oven at 180 °C for about 15 minutes.
Heat the remaining Uncle Ben’s® rice and serve the stuffed zucchini with it.
