For the green tea syrup, boil the water with the sugar and honey once, add the tea bags and the lemon thyme and let it steep for 5 minutes. Remove the tea bags from the liquid and bottle the syrup together with the thyme, let it cool in the refrigerator.
Pour part of the green tea syrup into a glass with some ice and a sprig of thyme, pour mineral water or sparkling wine and serve.
