For the endive salad, wash the endives a few times in water. Pluck the leaves into pieces and dry them in a salad spinner.
Remove the peel and seeds from the litchis. Chop the nuts coarsely.
Make a dressing with the lemon juice, oil, mustard, honey, salt and pepper.
Put the endives in a salad bowl. Add the lychees and drizzle the dressing over the salad.
Sprinkle the nuts on top.
