For the waffles with applesauce, cream the butter, sugar, vanilla sugar and a pinch of salt until well fluffy. Gradually beat in the eggs.
Fold the flour and baking powder into the butter-egg mixture and stir in the buttermilk.
Let the dough rest for about 30 minutes and fry in batches in a waffle iron until crispy.
While still warm, sprinkle with powdered sugar and serve the waffles with applesauce.

Sprinkled with cinnamon sugar, the waffles with applesauce taste almost like apple strudel. Of course, you can also prepare the waffles with other toppings. Allowed is what tastes good.
