Steam, peel and strain the potatoes.
Mix well with butter, salt and eggs, add flour and semolina to a firm mass.
Pit the apricots and fill each with a piece of sugar cube, coat with the potato dough and form dumplings.
Cook the dumplings carefully and slowly in a pot of salted water for 10 minutes.
Then very carefully place the dumplings in a frying pan with hot melted butter, bread crumbs and sugar and roll them in it.
Garnish with powdered sugar on the plate.
