For the spelt rice with vegetable ragout, blanch the tomatoes. Heat some butter or canola oil in a pan and brown the vegetables. Cut the tomatoes into small pieces and add to the vegetables with the thyme sprigs. Season with a little herb salt.
Cover and let steam, because the vegetables should still be crunchy. If necessary, add a little water. For the spelt rice with vegetable ragout, cook the spelt rice in salted water and mix with the vegetable ragout.
