For the creamy pea soup, first sauté onion pieces in butter until translucent.
Add stock and cream
Season.
Simmer gently for about 10 minutes.
Add peas and simmer for about 3 minutes.
Finely puree pea soup with blender.
Mix starch with cold water until smooth and thicken pea soup with it.
Bring creamy pea soup to a boil and serve hot with chowder!

For a finer, velvety flavor, if desired, pour pea soup through a strainer.
