Bring white wine, martini, water and vinegar to a boil, season and cook finely chopped vegetables, mushrooms and garlic in it over low heat for 3 – 4 minutes.
Strain half of the vegetable stock, reduce to one third and thicken with starch.
Let the vegetables steep in the remaining stock for about 5 hours. Strain and warm up in the stock with the crabs and arrange lukewarm on the lettuce leaves. Sprinkle with sesame seeds and drizzle with sesame oil.

Instead of crayfish, you can use brook trout, brook char, alpine salmon, etc.
