Rinse and drain the apricots and cut them crosswise. Blanch in boiling water for 20-30 seconds, then rinse and drain. Skin, halve and pit the apricots. Cut the apricot halves into small pieces. Peel and finely dice the shallots. Halve the pepper lengthwise, clean and finely dice. Peel and finely dice the ginger.
