Put the mushrooms in a suitable bowl and season with sea salt, pepper and lemon. Pour in white wine. Add the thyme, bay leaf spice, coriander seeds, peeled, seeded and diced tomatoes and chopped parsley. Stir, heat olive oil very hot and sauté very finely diced onion until soft. Add the rest of the ingredients, close the pot and simmer over medium heat for 5 minutes. Serve lukewarm.
