Variant 1, Brigitte: Here is a recipe from www. Sds. De/remscheid/features/cookbook Mix all ingredients to a dough. Then toast the dough by tablespoonfuls in hot fat in a frying pan. The potato patties go well with rue benkraut, apple puree or apple slaw, or perhaps a slice of brown bread.
Variation 2, Vanessa Kahre: Leineweber – a special kind of pancake with cooked, peeled potatoes from the southern Münsterland. Peel cooked, peeled potatoes and cut them into slices. Clean parsley and chop finely. In a baking bowl, stir flour with eggs and milk. Season to taste with the spices. Heat fat in batches in frying pan. Fry 1/4 of the potatoes at a time. Pour 1/4 of the dough over it.
Roast for about 5 minutes. Carefully turn the pancakes to the other side and roast the other side for about 3 minutes. Keep warm until all pancakes are fried. Sprinkle parsley on top Serve with mixed leaf salad.
