Cut the cheese into small pieces and boil briefly in a pot with milk and whipped cream. Season with cayenne pepper and season with cognac. Let simmer for about 2 minutes. Then blend with a hand blender. Pour into hot rinsed soup bowls and serve with brown bread croutons.
