Pour warm water into a bowl, add sugar and yeast and let rise. Add flour and stir, let the dough rise for an hour.
Bake the ataif in a hot frying pan with a little oil: 1 tablespoon of dough goes into the frying pan, the dough is baked only from one side until it comes off the frying pan. Place on a plate.
Fill the ready-baked dough patties with nuts or cheese, respectively (see below for filling): Form filling in the center of the unfried side, fold the ataif into a crescent and press together with your fingers. Fry in oil in a hot saucepan (200 °C ) until golden brown (three or four at a time, two to three min).
Drain on kitchen roll. Dip the ataif in ready-cooked atar (syrup) or pour the atar over them and serve hot.
Fillings Cheese filling: Mash white cheese (Kareeshee , substitute e.g. ricotta) with a fork and mold in the center of the unfried side.
Nut stuffing: Put various kinds of nuts in a mortar with sugar mold and crush (one and a half cups of nuts with a quarter cup of sugar). Season with cinnamon to taste.
