Remove the garlic cloves from the bulb and wrap them with 1 tbsp. oil, salt and rosemary in tin foil and bake in a hot oven for 25 minutes at 210 °C (fan 190 °C, gas mark 3-4). Take them out, let them cool down a bit and remove the cloves from the skin.

Mix the garlic with egg yolk, Tabasco and pepper in a baking bowl. Gradually add the remaining olive oil in a thin stream, stirring. Season with juice of one lemon, sugar and salt.

Alternatively, place all ingredients in a tall container and whisk until homogeneous. While doing so, pull the stick from the bottom upwards. It is important that all ingredients have the same heat.
