For the apricot and curd strudel, cream the butter with sugar and rum, stir in the eggs and finally mix in the custard powder and curd.

Pit the apricots and cut into quarters, mix in together with a pinch of salt. Roll out puff pastry, cut away 2-3 strips of pastry for decoration. Cover one side of the dough with the curd mixture, roll up, brush with egg and decorate with the strips.

Bake in the oven at 180°C until the strudel is golden brown. Sprinkle with powdered sugar and serve with fresh apricots.

Preparation Tip:

Serve the apricot-topfenstrudel with scraped white chocolate!
