Sea fish is very rich in iodine, which is a component of thyroid hormones, and fluorine, which hardens tooth enamel. The two minerals are exceptionally scarce in inland areas.

This soup helps to supply them – and it doesn’t taste fishy at all!

Rinse the fresh or thawed fish, dry and drizzle with the juice.

Peel the carrots, cut them into slices and sauté them in 1 teaspoon of butter. Add one eighth of a liter of water. Peel the apple, remove the core and cut the fruit into slices, add to the carrots and cook for another 5 minutes.

Then mash the vegetables, season with whipped cream and soy sauce. Cut the fish into small pieces, season, add and cook for 8 minutes. Garnish with finely chopped lemon balm.

Simply hold the blender in the finished soup.
