Instructions:

Rinse apples, remove core (apple corer), sprinkle inside with juice of one lemon.

Roast almond kernels in a frying pan without fat until golden brown. Knead marzipan with rum, almond slivers and raisins well.

Fill the apples with the marzipan mixture and place them in a buttered baking pan. Bake in the oven heated to 200 °C for about 20 to 30 minutes.

In the meantime, prepare the cinnamon sauce:

Cinnamon sauce: Boil milk with the cinnamon stick and salt. Mix egg yolks with cinnamon, vanilla sugar, sugar and crème fraîche. Pour the egg mixture into the milk, stirring at low temperature until the egg binds.

Remove the sauce from the stove and cool in a cold water bath. Add a little rum if necessary. Serve the apples with the sauce.
