For Baked Pumpkin with Eggs, chop peeled, ripe pumpkin flesh into pieces. Place in a saucepan, season lightly with salt and pour 2-3 tbsp water. Cover and simmer or steam until soft. Puree or pass through a fine sieve. Allow to cool slightly. Preheat oven to 200 degrees Celsius.

Stir half of the finely ground almonds and half of the butter into the pumpkin puree. Mix the eggs, stir with half of the freshly ground Parmesan until smooth. Add the pumpkin puree by the spoonful . Season with pepper and salt.

Grease an ovenproof dish with butter. Pour in the pumpkin eggs, sprinkle with the remaining almonds and Parmesan, place the remaining butter in flakes on top.

Place in the heated oven (gas: level 3) and leave to set (takes about 1/2 hour).

Quickly serve the baked pumpkin with eggs!
