Clean the arugula, wash and spin dry. Cut the well trimmed beef fillet into thin slices. Salt and pepper the slices of meat. Heat some olive oil in a pan and quickly fry the fillet strips on both sides. Remove and keep warm. For the dressing, mix the balsamic vinegar with salt, pepper and olive oil and marinate the arugula with it. Place the meat on the plates and spread the marinated arugula over it. Grate the Parmesan on top.
