Wash the beef cutlets, pat dry and carefully pat evenly flat. Coat each beef cutlet on one side with mustard and season with salt and pepper.

Cut gherkins and Jausenspeck into thin strips or cubes. Top each beef cutlet with gherkins and bacon and roll into a roulade.

Secure the roulades with toothpicks or skewers or tie with twine.

Heat oil in a pressure cooker. Sear the beef roulades well on all sides. Remove roulades and dust roast residue with flour. Deglaze with hot beef broth.

Put the roulades back into the pressure cooker, close it and simmer for about 20 minutes under pressure. In the meantime, cook the pasta in salted water until al dente.

Serve the beef roulades with pasta and juice.

Preparation Tip:

Alternatively, you can cook the beef roulades in a normal pot, but here the cooking time is extended to about 2 hours. Instead of pasta, dumplings can also be used. Enjoy with fresh green salad.
