Quarter the peppers, remove the seeds, rinse. Place in oven until skin blisters, then remove skin. Cut the skinned peppers into tender strips. Rinse the mint, shake dry and chop the leaves finely.

Heat a non-stick frying pan without fat. Form a tortilla in it, heat it for about 15 seconds, remove it and cover it with a dishcloth. Do the same with the remaining tortillas.

Spread each of the warm tortillas with 1 tbsp. fresh goat cheese. Top with strips of bell bell pepper, sprinkle with mint, and season with salt and pepper. Roll up tortillas tightly and wrap in plastic wrap. Twist the ends of the foil tightly and place the rolls in the refrigerator for 1 hour.

Remove the plastic wrap and clip the uneven ends of the rolls with a sharp kitchen knife. Then cut the rolls into five pieces each.
