Instructions:

For the paprika egg galettes with crispy breakfast bacon, first preheat the oven to 200 °C.

Mix the peppers, onion, thyme and spices together with the olive oil in a bowl and braise in the oven (on a baking tray with baking paper) for approx. 25-30 minutes. Stir frequently. Sprinkle with half of the herbs and set aside.

Beat one egg. Cut puff pastry into 4 squares and prick in the center with a fork. Brush the edges with the beaten egg and fold all 4 sides in slightly towards the center, creating small edges. Bake in the oven at 220 °C for 8 minutes.

Then brush the center with sour cream, spread the bell pepper and onion mixture on top, gently beat an egg on each and brush the edges with beaten egg. Reduce oven temperature to 180 °C and bake again for about 8-10 minutes. Then sprinkle with sea salt, pepper and the remaining herbs.

In the meantime, fry breakfast bacon without fat in a non-stick pan until crispy and finally drizzle with maple syrup. Serve bell pepper and egg galettes with crispy breakfast bacon.
