For salsify in curry sauce, peel salsify under running water, cut diagonally about 3 cm thick slices and place in vinegar water to keep white.

Melt the butter on the stove. Briefly sweat the curry in it at a moderate temperature while stirring. Add the salsifies dripping wet and turn them in the curry butter, season with pepper and salt and stir in the whipped cream.

Steam the black salsifies with the lid closed at a moderate temperature for 20 min. until soft. Steam without lid for another 5 min.

Lightly toast the sesame seeds without fat in a frying pan until fragrant and sprinkle over the salsify in curry sauce.
