Palatschinken are called “pancakes” in southern Germany, elsewhere also omelettes.

For one person, calculate the quantities listed under ingredients. First of all, prepare a smooth, thick batter with flour and a little milk, salt it, add a little sugar or other spices as you like, and beat in the eggs. You can also just add the egg yolks and whip the egg whites until stiff, or use beer instead of milk. It makes the pancakes very nice and does not affect the taste. If you want to save on eggs, add a little baking powder.

For about 200 g of flour, calculate 1 level teaspoon of baking powder. The almost liquid dough is poured with a small ladle in portions into a frying pan with very well preheated fat and browned at the bottom.

In the meantime, add the sorted, well-sugared blueberries (bilberries) to the still soft batter, pour another layer of pancake batter on top and finish baking the pancake.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
