For the bread casserole with organic goat cheese and peaches, cut sunflower bread into cubes. Cream soft butter with powdered sugar, yolks and lemon zest. Stir in the finely grated sunflower seeds.

Beat the egg whites and granulated sugar until stiff and gently fold into the mixture. Cut the goat cheese into small cubes, peel and pit the peaches and cut into wedges. Finally, fold goat cheese cubes and peach wedges into the mixture.

Then butter 4 souffle molds and sprinkle granulated sugar. Pour the mixture into the soufflé molds and bake in the oven at 170°C for about 30-35 minutes. Garnish bread soufflé with sunflower seeds and mint. Lightly sprinkle with sugar if necessary and serve immediately.
