Preheat oven to 220 °C hot air or 250 °C bottom/upper heat.

Put all ingredients one after the other into a bowl. Mix everything with a fork. Do not mix bread dough too liquid, otherwise the bread will be bacony. Let the bread dough rise airtight in a bowl covered with foil in a warm place until it has increased in size by at least half (about 30-60 minutes). If yogurt, curd or buttermilk are added, the rising time will be extended by a couple of hours.

Once the bread dough has risen well, remove from the bowl with a dough card and spread into a loaf pan or onto a baking sheet.

Brush with water, milk or egg white and bake for about 12 minutes. Then turn down the baking temperature to 180 °C hot air or 200 °C bottom/upper heat and bake the bread (approx. 40-50 minutes) until it sounds hollow when tapped.

After baking, immediately place the bread on a rack. If it remains on the tray, the crust will be soft.

Preparation Tip:

Bread made from wholemeal flour remains sticky. Only if it remains sticky during processing, the wholemeal bread will taste moist afterwards. Bread from white flour, on the other hand, should form a lump and detach from the bowl.
