Boil meat in water with spices and boil for 90 min. Pass clear soup through a sieve.
Boil potatoes in water, boil for 20 minutes, then mash.
Put the meat and onions through a meat grinder, mix with the potatoes and add as much clear soup as necessary to make a paste.
Cut cucumber into small cubes and stir into labskaus. Season with salt and pepper. Heat clarified butter and fry eggs in it.
Divide labskaus evenly among plates, place a fried egg on each unit and place matjes fillets next to it.
Serving: Beet leaf salad, pickled gherkins.
