For the broccoli and green bean soup, wash and chop the whole broccoli, remove the stalk and cut into thin slices. Heat the oil in a large pot. When the oil is hot, add the sliced stalk and sauté over medium heat.

Chop onion into cubes and add to pot. Wash the runner beans, cut off the ends and divide into smaller pieces. Add water to the onion and the stalk and boil down the soup powder. After about 5 to 6 minutes, add the green beans, stirring in between.

After about 10 minutes, add the broccoli florets, stir, season with pepper and thyme and salt if needed. While the soup is boiling, put the lid on at an angle or place a cooking spoon between the lid and the pot, stirring in between.

When the vegetables are soft, turn off the heat and let sit for about 10 minutes. Puree the soup with a hand blender, season to taste and add a little more water to the broccoli-french bean soup, depending on the desired consistency.

Preparation Tip:

To make the broccoli and green bean soup a little creamier, you can cook a potato with it.
