Instructions:

Place the ribs in a large saucepan and cover with cold water.

Bring to a boil, then cover and simmer over low heat until tender, about 1 hour. Skim occasionally during this process. Drain and place in a large roasting pan or the grease pan of the oven. Preheat the stove to 180 °C.

The sauce: In a medium Reindl, heat the oil over medium heat and sauté the onion and garlic for 3 minutes until translucent. Stir in all remaining ingredients except the chicken stock or demi- glace and bring to the boil. Reduce by half in 10 to 15 min. Next, stir in the stock. Spread half of the sauce evenly over the ribs and bake for 30 to 40 min, until browned. Turn once to the other side during this process.

Cut the meat into 4 or more ribs per person and bring to the table with the remaining sauce.

Serve with white soda bread.
