For the Caipirinha with cotton candy making the lime chips, wash the limes under hot water, grate the peel and set aside. Then carefully peel the limes, remove the white skin as much as possible, but do not destroy the flesh, then freeze briefly and cut into very thin slices with a slicer, dust with powdered sugar and dry in the oven at 60-70°C on a baking tray with a silicone mat (also works in a dehydrator). Store the finished chips in a dry place, otherwise they absorb moisture from the air and become soft.Then make cotton candy from the powdered sugar in the machine (according to the manufacturer’s instructions).For the caipirinha jelly, bring water to a boil with agazoon, stirring over medium heat, remove from heat. Add cachaca, lime juice and Lime Juice Coridal.Pour the mixture into the round molds and refrigerate until firm. Carefully squeeze the jelly out of the molds and freeze.To serve, arrange one serving each of frozen Caipirinha Jelly on a lime chip or between 2 chips and garnish with cotton candy and lime zest.

Preparation Tip:

If you don't have a cotton candy machine, you can just add some brown cane sugar to the jelly.
