Instructions:

This caramelized Caribbean chicken was prepared for us by dear visitors from Barbados. It’s a great recipe that makes you want to leave for the Caribbean immediately… since most of us have to stay here, we’ll just take a culinary trip:

For the spice paste, chop the specified ingredients very finely or blend coarsely in a blender to form a paste – it should not be too runny.

For the Caribbean chicken, cut the chicken into parts and marinate in lime juice and salt water for half an hour for now. Drain the water and wash the chicken. Now marinate again with lime juice, garlic, scallions, hot pepper sauce and cloves. Cut the chicken pieces and stuff with the spice paste.

Allow to soak for at least 1 hour.

Heat pan and cover with a little sugar, let caramelize until dark brown and fragrant – be careful not to let it burn!

Reduce heat and add the chicken. Peel and slice the carrots and add them as well. Add a little water and simmer, covered, until slowly tender. Season to taste and serve the caramelized Caribbean chicken with rice, potatoes, vegetables or macaroni pie.
