Soak the apple rings in white wine for at least 4 hours, then strain and collect the wine. Cut the white cabbage into eighths and in wide strips from the stem, rinse briefly and drain slightly. Scrape the ginger (according to Duden = scrape off) and chop very finely. Caramelize the sugar in a heavy saucepan until golden brown. Melt the butter in it, fold in the ginger and aniseed. Add the white cabbage, season with salt and stir-fry. Deglaze with the apple cider and steam with the lid closed at just medium temperature for 30 minutes. Add the apple rings and cook for another 15 minutes. In the meantime, rub pork fish with salt, pepper and crushed marjoram and roast in clarified butter at not too high temperature for 20-30 min. while turning continuously. Cover and keep warm for 5 minutes. Season the cabbage heartily with pepper. Chop the hazelnuts, roast in a frying pan without fat and sprinkle over the cabbage. Serve with the sliced meat.

An iced aquavit – drunk before the meal – tempts the appetite.

Tip: Instead of clarified butter, you can also use butter in most cases.
