Instructions:

Put the apple pieces, sugar, raisins, water and spices in a saucepan, cover and cook gently for about 20 minutes.

Remove the lid and stir the apples, which should now be mushy and fall apart on their own, with a wooden spoon.

Continue stirring until you have a fairly fine applesauce.

However, it should retain some graininess so that it does not turn into puree.

Keep the sauce warm over very low heat and prepare the oatmeal.

Put the oatmeal, milk and cardamom pods in a second saucepan and bring to a slow boil.

Simmer for about 6 minutes until the porridge takes on a creamy consistency and all the oatmeal has softened.

Add butter to the applesauce and stir until melted.

Spoon half of the applesauce into the porridge and stir well.

Before serving, use a metal spoon to pick out as many spice seeds as possible.

Pour the porridge into bowls and put a spoonful of applesauce on each bowl.

Sprinkle the soft brown sugar on top and serve the cardamom oat porridge with hot apple sauce as soon as the sugar has dissolved.
