For the cardinal slice with whipped cream, first mix the egg yolks, flour and powdered sugar into a mixture. Fill this into a piping bag and pipe strips onto a small baking tray or into a loaf pan.

Whip the egg whites, powdered sugar and 1 tablespoon of lemon juice into a meringue mixture, which should be quite stiff. Also fill into a piping bag and squirt between the sponge cake strips, then squirt strips on top of the sponge cake strips and meringue mixture in between, repeat once more.

Bake gently at 150 degrees and hot air until the sponge is cooked through. Leave to cool. Then cut through once or twice. Whip the cream with cream stiffener and 4 tablespoons of powdered sugar and fill the cake, then cut into slices and refrigerate. Serve the cardinal slices with whipped cream.

Preparation Tip:

You can, of course, add vanilla sugar to the whipped cream for the cardinal slice with whipped cream on a whim.
