Instructions:

Prepare two masses for the fluffy tender cardinal slices.

1st mixture: Beat the egg whites with a pinch of salt until stiff. Let the sugar trickle in while beating.

2nd mixture: beat eggs, yolks, vanilla and sugar until foamy. Then mix in the flour. On two strips of parchment 15 cm wide and 40 cm long, pipe 3 strips each of the first mixture with a large hole nozzle, spacing them evenly.

Inside each of these 3 strips of snow, apply 2 strips of the second mass (sponge).

You have made the upper and lower part of the cardinal slice.Dust everything quickly with powdered sugar and bake at 165 degrees hot air for about 20 minutes.

Let cool. Peel off the paper.Use one of the two strips as the bottom part. Apply coffee cream or jam on it.Put the second part as the top and press lightly.

Sugar the cardinal slices and portion them.

Preparation Tip:

Even if it is not the classic cardinal slices recipe: many like the slices also with coffee cream. For this, whip 500 ml of whipped cream, coffee flavoring, vanilla sugar and 40 g of powdered sugar.
