For the Caribbean muffins, preheat the oven to 180°C top/bottom heat. Cream butter and sugar until sugar dissolves and add eggs and salt. Mash bananas with a fork, mix with lemon or lime juice and add to the batter.

Mix the flour with cinnamon, baking powder and nutmeg and gently fold into the mixture. Add coke flakes and chocolate drops. Pour the batter into the desired molds and bake the Caribbean muffins in the preheated oven for 20 minutes.

The rum raisins enhance the Caribbean flavor.
