Instructions:

For the char fillets with pea-mint puree, first prepare the char fillets.

To do this, line a steamer insert with the fresh summer herbs and place the fish fillets on top. Empty the wine into a pot and place the steamer insert in it.

Put the lid on tightly and bring to a boil once. Set aside and let steam for another 5-10 minutes with residual heat.

Finely dice shallot and garlic and sauté in olive oil until translucent. Add peas and sauté for another 5 minutes over low heat. Add 8 tablespoons water, 2 tablespoons lemon juice and zest to peas and simmer for 2 minutes.
