In a pot, bring salted water to a boil and cook the whole wheat spaghetti until al dente. Strain and toss in a little hot olive oil. Meanwhile, peel the kohlrabi and cut into 5 mm cubes. Place in a pot, just cover with water and simmer with a little salt, pepper as well as half a tablespoon of butter for about 5 minutes. Season the well boned char fillets with salt and pepper. Once the kohlrabi is almost soft, place the fish fillets on top and steam, covered, for about 3 minutes. Lift kohlrabi and fish out of stock and arrange on warmed plates. Mix the remaining kohlrabi stock with a little lemon juice and half a tablespoon of butter. Fold in the whipped cream. Season the sauce to taste and pour over the fish. Sprinkle with cress. Serve with wholemeal spaghetti tossed in oil.
