Sift flour into a large enough bowl and make a well in the center. Pour in the whipped cream and egg and mix with some of the flour to form a thick paste. Sprinkle Parmesan (1) on top. Add butter in pieces on top, cover with flour and from the center quickly knead all ingredients together to form a smooth dough.

Roll out the dough to a thickness of about 1/2 cm, cut out galettes with a round mold (diameter 3-5 cm), place them on a greased baking tray and put them in the preheated oven. Bake the galettes at 175-200 °C in 5-8 min. until half cooked.

For the filling, remove the rind from the Brie, spread the cheese through a sieve, spread half of the galettes with the cheese and cover with the remaining galettes. Whisk the egg yolk with the milk and brush the galettes with it. Sprinkle with Parmesan (2), place the cheese galettes repeatedly in the oven and bake repeatedly for 5-8 min.
