Instructions:

1. Mix 140 g vanilla sugar, sugar, butter, salt with the dough hook of the mixer. Fold in egg yolks. Knead in flour and chocolate chips. Wrap dough in plastic wrap, chill for 1 hour 2. Shape dough into small balls and roll in chopped nuts.

Place 3 inches apart on baking sheets with parchment paper. Press indentations in center of balls with floured wooden spoon handle. Bake in a heated oven at 180 °C on the 2nd rack from the bottom for 18 minutes (convection oven for 15 minutes at 160 °C). Cool.

Chop the chocolate. Melt with whipped cream, honey and 30 g butter over a hot water bath. Cool until ready to pipe. Squirt into the cavities using a piping bag with a small hole nozzle, set.

Tip: Feel free to use better chocolate – the more delicious the result!
