For the Christmas chutney, fillet the oranges, reserving the juice. Peel and dice the apple and papaya. Mix orange fillets, apple, papaya, orange and lemon juice.

Add ginger, garlic and onion. Finely dice dried fruit, cut chili into fine strips and add.

Add spices and simmer gently for about an hour. Remove cinnamon stick and star anise and season to taste.

Pour the Christmas chutney while still hot into small, sterile jars, close them and leave them on the lid for some time.
