For the Christmas trees, quickly knead all ingredients together on the work surface with cold hands. The butter pieces should be as cold as possible! Sift the powdered sugar.

Briefly kneaded dough cover with plastic wrap and let rest in the refrigerator for 2 hours. Line a baking tray with baking paper. Preheat the oven to 170 °C.

Dust the work surface with a little flour and roll out the dough on it. Cut out the cookies with Christmas tree cutters and place them on the baking tray. Bake the shortbread cookies for about 10-12 minutes until light.

Warm the jam and spread it on half of the cookies while they are still warm. Place a 2nd cookie on top of each. Mix the powdered sugar with the lemon juice (drop by drop) and as soon as the consistency is right, coat the top of the cookies with it or just the top. Sprinkle the sugar pearls on top.

The Christmas trees can be decorated in any other way. Also with green colored icing, etc. you can paint the little trees.
