It is best to tell the (possibly even Turkish butcher) that you want to make this raw meat delicacy from it, so that he gives you very fresh meat. Buy the meat as close to the time of preparation and consumption as possible. Refrigerate it as continuously as possible apart from the time of kneading. Transport the finished cig köfte in a cooler bag to your picnic spot and serve it as soon as possible.
