A great pasta dish for any occasion:

Rinse poulard, carve into 6 pieces. Peel onions, chop. Peel celery and carrots, dice. Rinse kitchen herbs, chop. Mix prepared peppercorns, vegetables, anise and wine. Let the poulard marinate in it for about 12 hours(!) with the lid closed. Peel and chop the garlic clove. Drain the meat. Sauté garlic in oil. Brown meat for 10 minutes. Season. Douse with marinade, canned tomatoes and stock. Cover and steam for 20 min.

Divide broccoli into roses. Cook in salted water for 8 min. Cut mushrooms in half. Make noodles 7 min. Cut tomatoes into cubes. Grind basil. Just before serving, melt 1 tbsp fat. Toss basil, tomatoes and noodles in it. Remove meat. Strain stock. Sauté mushrooms in remaining fat. Season. Deglaze with stock and whipped cream. Bind and season.
