Sauté the onions in hot olive oil until soft. Before they take color, add the tomatoes and steam for 10 minutes. Add the capers and olives to the sauce and season with oregano, salt and pepper. Simmer on low heat for another 5 min. When the sauce is creamy, pour in the cutlets so that the meat is covered with sauce. Simmer again for 10 min on low heat. Sprinkle with parsley before serving.
