For the Krautfleckerl a la Carbonara, peel and finely chop the onion. Remove the stalk from the cabbage head and cut it into small pieces. Cut the bacon into strips or small squares.

Heat a little oil in a large pan and fry the bacon in it. Add the onions and sauté until translucent. Sprinkle a spoonful of sugar and let it caramelize.

Now add the cabbage, sauté briefly and deglaze with wine. Add some vegetable soup and steam until soft. In the meantime, cook Fleckerl in salted water according to package instructions until al dente.

In a bowl mix salt, pepper, egg yolk, parsley and parmesan. When pasta is done set aside a few spoonfuls of the pasta water. Do not rinse pasta just strain and add to pan. Mix well.

Remove the pan away from the heat (don’t let it get too hot or the eggs will set) and add the egg and cheese mixture, tossing well.

If it is a bit too dry, add the pasta water set aside. Arrange the Krautfleckerl a la Carbonara and serve immediately.
