For the croquette balls, boil potatoes and drive peeled through a press. Spread on the work surface and let cool slightly.

Knead butter, starch flour, yolk and salt into the potato mixture and form small balls. Roll the balls in almond flakes.

Cover a baking tray with baking paper and carefully place the balls next to each other. Bake at 170 degrees for about 20 minutes until light brown.
