For the curried potatoes with fried egg, peel the potatoes (best cooked the day before) and cut into bite-sized pieces. Heat the butter well in a pan, mix the spices (garlic, cumin, ginger, curry and mustard) in the pan and brown for a few seconds.

Add the chopped, cold potato pieces to the pan and mix well until everything is well blended. Season with salt to taste.

Divide the potatoes among plates and in the same pan fry the fried eggs. When they are fried, place them on top of the potatoes and sprinkle with some chives.

Preparation Tip:

A few small cubes of bacon underneath and toasted with the spices make the curried potatoes with fried egg even spicier.
