Instructions:

Preheat the oven to 180 °C.

Cut the fillets lengthwise to make a long strip and pat it lightly. Salt, pepper and roll into snails. Wrap each with 2 slices of bacon and tie with spaghetti.

Heat the butter and oil in a pan and quickly sear the fillets in it on both sides. Add the juniper berries and bay leaf and place in the hot oven.

Roast at 180 °C for about 8 minutes. Remove the hare fillets from the pan and keep warm wrapped in aluminum foil.

Pour red wine and game stock over the roasting residue and reduce to about 125 ml. Remove juniper berries and bay leaf, add green peppercorns and boil up again briefly.

Finally, season with thyme, salt and pepper. Meanwhile, heat some butter in a pan, add gnocchi and fry. Season with salt and pepper.

Arrange the finished roasted hare fillets on the preheated plates, cover with the pepper sauce and serve with the dumplings.

Preparation Tip:

If you quickly deglaze the dumplings with a dash of water shortly before serving them in the pan, the evaporating water will make the dumplings wonderfully hot!
