Instructions:

First, remove the chicken from the skin and bones and lightly salt.

Chop all the ingredients and mix with the soy sauce, if possible leave to marinate overnight or for several hours.

Remove the chicken from the marinade and drain well, sear on both sides in a hot pan with a little olive oil and finish in the oven at 160 °C for about 15-20 minutes.

Soak the soybeans overnight, boil them in 750ml of water and the spices until soft, drain and mash finely with the butter, a little olive oil and salt.

Cut the chicken into small pieces, place a dollop of soybean puree in the center of the plate, arrange the chicken on top and serve.
